Euclidean space is flat.

My understanding is that manifolds are constructed to be locally Euclidean, which is quite different from locally zero curvature.

Yup. Also, I presume that each of those map gores has some stretch to it, especially once wetted with paste. It's a mesh of fibers, not an idealized 2D sheet.

It's a lovely theorem that all manifolds are approximately flat on small enough scales.  That is how.

I was literally just listening to someone say this on the Lunchbox Envy podcast episode about pizza (which is excellent and was also making me hungry) -- that the flat piece of paper and a basketball (in their example) have different https://en.wikipedia.org/wiki/Gaussian_curvature and so aren't compatible.

The reason for this being mentioned about pizza was that creasing the pizza in the middle of the crust will cause the line of symmetry to stay flat, or some such?

Pizza is a good source of Vitamin S(cience) as well as being delicious, it seems!

Service announcement: xscreensaver is the most inspirational software one can have on the computer. I set a few minutes of random screensaver before blanking. It is a disgrace that distros/wm-s replace it with whatever-screensaver, discarding the vast range of artistic demos that xscreensaver has.
